The Old Folks Home

While grocery shopping today, i found a package of frozen quail. I have never tasted it. So i bought it. I want to grill it somehow. A friend told me to put a smoked sausage into the cavity, and wrap with bacon. The grill......Anybody have any ideas?

Quail (or any frozen poultry) can benefit greatly from brining. This can get rid of that slight freezer flavor AND makes for a juicy bird. My suggestion would be to smoke them. They should cook up pretty quick.

We got a little Fri. but only enough to dampen the dust. All the way around us got lots of rain. My daughter lives in Prattville and they got 6"! :eek:


That was a lot of rain. Ithink the hardest rain went North of us We are not far off of US 80 about 100 miles East of Columbus. We get most of our rain coming on shore around Mobile and Pensacola.

I have never cooked them but want to.  With Cornish Game hens I have cooked them a few ways. 
All get Salt, pepper, and poultry seasoning outside.

Roasted whole with an onion inside.
Spatch cocked and roasted flat in a skillet.  To spatch cock you normally cut out the back bone then the bird unfolds so you can flatten it...  breaking the breast bone.  Now the whole bird will lay flat.... Very even cooking....  I dont cut the back bone out I just cut down the backbone with poultry shears.
split in half and layed on top of dressing for roasting.
Skewered and cooked on the rotisserie on the barbecue.  (this gets Barbeque sauce the last few minutes)

Outside of skewering it You could probably cook them the same ways....  Though You might put them in a basket for rotisserie cooking.

I have spatch cocked chickens and cooked them on the grill pretty hot. They cook faster ans stay moister because they cook much faster .

I got my first Chantecler egg today and it is the same size as my year old Welsumer egg.

I have cooked dove. It is delicious. Dove hunting season is coming up soon. We have 4 seasons. Dove, turkey, deer, and deer

Didn't you want to say, "Dove, Turkey, Deer, and Beer"????
You know.... I may just do the turkey Boned and trussed with the dressing..... then I could carve it up with a slice of stuffing right inside.

Then make Bone stock.

November is coming any one doing their own home grown Turkey?

not impressed with having to deal with such a stupid animal, and thought it was tastier than store bought I greatly prefer Muscovy duck. So, we are raising our own Muscovy duck for Thanksgiving and Christmas.
