Just do it and put them in the freezer for a couple of weeks. I cooked the 16 mo Cobb 500 rooster that I processed 4 days ago. Boiled for about 3+ hours and still tough and bitter tasting. Going out to the animals. Dogs like it.Ok folks....I need ur help..to make a long story short, we have 2 big (12-14 lb) brahma cockbirds that do not fit into our breeding goals whatsoever. I had a 6 mo rooster and did not have the bitter taste. This is totally different. But then my palate has been formed by the grocery store. I may have to learn new skills to prepare old ones. Other than feeding to the dogs and chickens.Do big year old roosters taste funny?
