SCG - yea on the eggs!!!

I double agree on the russian kale, yum! I buy organic kale as a treat for my girls in the winter because it's a great replacement protein source. We finally just had a big natural foods store open in the nearest big town and it's loaded with goodies! I grow all the the "heavy" greens, always planting for us and the birds. We just don't have the weather to grow a decent lettuce.
Oh, and yes, duckweed is a great chicken snack. Also very good for humans.

I am a small of stature (5 ft 2") female as well. I am normally a very mild mannered, God fearing, live and let live type unless you are a threat to my DH, my children or my critters. I have been known to grab a large bear hound that wandered onto the property and decided to check out my girls by the tracking collar and drag it snarling and howling and throw it into my garage and stand there waiting for the idiot with the radio to show up looking for it, which he did. By the time I was through, they both left with their tails between their legs.

When we first bought our house we wondered why the pond was GREEN! I didn't know at first but it was only on the surface, the water itself was clear. After researching the stuff as a lurker on BYC I read people that grew duckweed in little kiddie pools to feed their chickens. Wow I have a pond full. I used a pool skimmer to get it out. Dump a pail full of duckweed in their run and the tadpoles and half grown frogs and leaches get eaten first.

Recipe for Chicken Paprikash. From my Hungarian Grandmother.


1 - chicken cut up leave the skin on.
1 large sweet onion diced
4 tblspoons of paprika (more or less to suit taste)
Salt
Pepper
3 tbls. lard or butter (or oil)
4 cups of water

3 cups of flour
3 eggs, slightly whisked
1-1 1/2 cups of water
1 tsp. salt

16 oz of sour cream
4 tbls. flour

in a heavy skillet on medium high heat, Brown the chicken pieces in the lard, butter or oil. Add the onions and saute until onions are cooked and clear. Sprinkle paprika, salt and pepper all over chicken and onions and cook for about 5 min until paprika coats the chicken. Pur the water in the skillet and cover. Cook on medium low until chicken is thouroughly cooked.

While chicken is cooking boil 8 quarts of water, salted. Put flour and 1 tsp. salt in a large bowl and make a well in the middle. Put the eggs in th middle and mix with a fork until mostly combined. Then add 1 cup water mix (you might want to change to a wooden spoon at this point) slowly add more water adding only enough to make a sticky dough like consistency.(humidity and flour density play a big role in how much water is needed- but they always turn out good. Drop by 1/2 teaspoonfuls into boiling water. When all dough is floating in the boiling water dumplings are done. Drain and set aside. By this time chicken is close to being done. When chicken is done remove chicken to a platter. Take a cup of the liquid from the pan and make a runny roux with the flour mixing the two a little at a time. when mixed and lumps are gone slowly add to sour cream to temper it. Then slowly add the sour cream to the rest of the liquid in the pan and heat over medium-high heat until boiling stirring constantly. It won't look like it's thickening, but when it cools down it will. Pour some of the sour cream sauce over the meat and when serving.

Good luck! The first time I made this my younger sister helped me and it took us all afternoon. And all evening to clean up. The ex said he didn't like it and we both were like uhhh this is just like mom's and grandma's what's not to like? Years later my mom made it for him and he said it was delicious.

My sister and I would have been charged with manslaughter if looks could kill. Now it only takes me about an hour to make and it still tastes the same. I will warn you making the dumplings can be physically challanging. But you will have exercised the calories off making it! lol Also if you want to take the time to skim the fat off the top of liquid it helps. A lot!
And some take the skin off to begin with, but that's not the Hungarian way. Sorry I don't have any pictures. It's my favorite but since I'm the only one in the house now who will eat it I don't make it.

Now you see the difference in you and me, Deb, I'd have washed the pan and put the bacon in it. In order to have meatloaf, you must have meat.

And nothin' is better than bacon. But it does look delish. Let us know how it tastes. Almost a dressing?

Back up, I reread this again and finally saw the part about the grass fed beef. Whew. That makes me feel soooo much better. Still like the idea of bacon though.

LOL.... I used bacon grease instead of butter... But when I cook bacon I cook the whole pound because the LOCUSTS get into it....

There was plenty of meat and it came out fabulous... My son is kind of particular aobut beef. and he ate a good half pound of the loaf.....

Surprisingly the cinnamon was a very delicate flavor in the dish... and the Basil in combination with the Cinnamon was out of this world flavorful...

Grandma only noticed that I didnt put tomato paste in it or catchup on top. But she ate a hearty slab of it any way....

I am not a small woman.... I am about 5'11". And When I was a country and western dancer I was about 200 lbs. I was a clogger, or flat footer. Yet I could do a bell kick... Thats where you jump off the floor and kick your heels to gether.

And this is Clogging which is a little more flamboyant.... What I did in the clubs with others.
this starts out with clogging Squares or Square dancing while clogging.

Deb - I was a clogger, and while we did sometimes dance "in the round" most of our routines were more like this....

I never got to dance in the round no partner.... I mostly did line dancing to a caller. Couldnt committ to memory most of them... I even clogged to polkas if I had a partner that was clogging... very rare too.

I miss it all Dancing in general.... soo much... when I get on a kick watching the videos i relive those good times and even the not so good....
