OK. She likes loud noises, slow walks on the beach in windy winter weather (tonight would be perfect with temps predicted in the negative 30's) and looooves vegan food.

I had vegan cheesecake once at a vegan restaurant in Bar Harbor (not the vegan mecca) and I have to admit I love cheesecake and this was just as good. I was shocked.

I don't want to discuss the rest of the meal... but the cheesecake...

What do you bind a vegan cheesecake with? You can't use eggs, or gelatin. Pectine and corn starch maybe? And then there's the issue of calling it cheese cake. I mean, you need dairy to make cheese. So it can't be a cheese cake. I wonder what they used to make the filling, something like almond milk? Interesting.
