As far as the rouge vif, I mix whatever varieties I have together. You can see the flesh difference here:
 
Hey Ron, the recipe you had for pumpkin pie seemed like there were 2 techniques at the end for preparing a pie pumpkin.
As I read it, one technique was to bake the pumpkin whole and the other was to cut it up and boil it. Am I correct?

Yes!

I like the bake overnight version. The pumpkin mash comes out nicely cooked that way and it is very easy to separate the inside and skin from the mash.
 
I also bake but for a shorter period of time...

I don't like things cooking that I can't watch.

Cut top off pumpkin. Remove slime/seeds/strings.

Cut pumpkin into pieces. Put tin foil down on baking pans to protect them. Put pumpkin on them skin up. Put into 350 degree oven with about half a cup of water in each baking pan and bake in 20 minute increments until you can "pinch" the skin like you would a tushie. Usually takes between 40 and 60 minutes.

Take out and let cool on the counter until you can touch them without screaming. Scrape meat off skin, put into food processor and smooth. You may need to strain excess water out.
 


All this pumpkin pie talk is making me want some so bad.
I have to go have some tests done tomorrow so might stop by the store and see what I can find for a pie. :)

I have been working on this Poo quilt. It's coming along. I basted the sides and turned it inside out like a pillow case and I have gotten about half of it quilted so far. I am quilting 3 rows of the pinwheels.
 
You have to have good pie pumpkins, I have tried the 'jack-o-lantern' ones once...for pumpkin soup, no flavor, pretty bland, borderline disgusting. We didn't start any pie pumpkins this yr, but the chipmunks planted some in some odd places Lol!, So we have a few, last yr 36. Next yr would like to try some bigger ones, the sugar baby or whatever ones we grew were only the size of between a softball and a soccer ball.
The 'cinderella' rouge d'etampes and the 'fairytale' pumpkins are more of a squash pumpkin, and much larger, want to try them.
We always bake, cut in half, remove all seeds and slime, cover with aluminum foil, meat cuts out easy, no skin or strings, mash with potato masher, and voila! pie filling...
We do yummy butternut squash the same way, had tons of them last yr also, wish the chipmunks planted some of their seeds....Lol!
Cut lengthwise, rub butter on them, and drizzle maple syrup on them, cover with aluminum foil.....Bake till tender...Eat like candy....
