Bunny, ouch, that's gotta hurt. I haven't had anything more serious since I took a jig saw to my left thumb last summer. Luckily that was mostly a scare and only took three stitches.

Work is having a potluck tomorrow. I realize pumpkin pie isn't quite a December thing but 1) I didn't have Thanksgiving this year and 2) the girls at work were flabbergasted that I made my own pie crust (but store bought is so easy...) let alone knew how to actually turn a pumpkin into a pie.

So I had to bring in pumpkin pie. I thawed too much pumpkin, also, so I made mini pumpkin cheesecakes with the remainder.

I am hoping at least one of them appreciates a good homemade pie crust. It really isn't difficult to make or do.

Would you mind sharing your recipe for pie crust?
I will share my Grandmothers nut bread recipe with you. I am not sure why but the browser won't let me paste. I have to open another one first. brb
 
Grandma's Nut Bread
Mash 1 teaspoon butter
Mix in 3 eggs, beat well
2 cups brown sugar
2 cups buttermilk with one small teaspoon
baking soda beat well in each cup
3 1/2 cups flour
Beat well, add 1 to 1 1/2 cups walnuts
Pour in 2 greased loaf pans
Bake at 350 45 minutes
Place on rack to cool, remove bread from pans
5-10 min, continue cooling on rack.
Freezes well.


(Grandma did not have measuring cups and for some recipes we had to use a coffee mug.) lol We never could get her Apple sauce cake recipe to do right)

Some people see spiritual things in food. On the last batch of cheesecakes that I pulled from the oven I saw a chicken vent dead center.

I made BF eat it so I didn't have to stare at it. When I served it to him he knew right away why. He said it was delicious.



Crust:
4 c all purpose flour
1 and 3/4 cup shortening (butter flavored crisco or lard)
3 tablespoons white sugar
2 teaspoons salt (I use kosher)
1 egg (I prefer duck)
1/2 cup cold water

I combine them in a food processor. If combining by hand add all ingredients except egg and water and smoosh together, then add the egg/water.

This makes about 2 crusts with lattice top or 1 full set of upper and lower crust plus one lower crust.

If you have difficulty rolling it out add a bit more flour and make sure it's really cold. I use either parchment paper or a plastic bendable cutting board to roll out onto, which I can then flip on top of the pie plate and tease off.

It freezes very well. I usually make a double batch and freeze them. Take them out a day in advance and put in fridge. I also can apple pie filling so I can make an apple pie really fast if needed.
 
I don't understand people who use store bought crust. It takes like 2 minutes to make it, and like 5 ingredients.

Al, yeah, you get 10 min more light. "Yay". I'm just a tiny bit further north than you. Up in Utsjoki, Lapland sunset was on Nov 26th and sunrise is on Jan 17th. Now that's dark.
