Alaskan I was just thinking of you. To briefly change the subject, I made the BC mint brownies. They had loads of green mint chips in them and some mint icing to drizzle over the top. The mint flavor was overpowering and I hate to say I tossed them out. The chocolate seemed to be dark chocolate, though it wasn't mentioned on the description. I don't like dark chocolate either.
But, maybe this all means you would love it.
As a kid we would make mint brownies every year for St. Pats. We used just a couple drops of mint extract in the batter. It gave it a very subtle, not overpowering mint flavor. Not something I'd want to eat all the time but tasty on occasion.
