Good morning everyone! Well, it's time to get the coop cleaned, the snowthrowers, shovels and storm gear ready then head to town for gas and groceries ahead of the coming snowstorm moving in late tomorrow and supposed to last thru early Saturday then the high temps by Christmas Eve are supposed to be below zero F. Needless to say, no traveling, it's going to be a quiet country Christmas at home for pa and I and the critters this year. We'll be safe and warm, the Lord takes good care of us. Praying for all of you that your Christmas find you all just as blessed.

And on tomatoes... so many kinds of those! Some have no bite to them at all.. sure vary.

Now carrots and peas... I would think those would need something to keep them good. Haven't canned either, so don't know.
Wasn't thinking clearly last night lol. We pressure can them.
 
Down here, when I was growing up, waterbath canning was used for canning most things. We're at sea level, so attaining good boiling temperatures, long enough was not a problem. There were not so many hybrid varieties of things, so pH was not a big issue. From what I've been reading, at least 2 things have changed. 1. There are now contaminants in the soil that can not be killed at normal boiling temperatures. They have to be killed with the higher temperatures attained from pressure canning. 2. Because of all the hybrid varieties of fruits, and vegetables, the pH on a lot of them is not nearly as acidic as before, thus they require the higher temperatures of pressure canning, or the addition of quite a bit of lemon juice, or vinegar to get the pH acidic enough to make them safe when waterbath canning them. The problem is, it takes quite a bit of acidity, so using the required amount of lemon juice, or vinegar can really impact the taste.

I need to clean the coop too! I also have some repairs from wind damage. Saturday the wind ripped the roof off of a hutch. Luckily it was empty
 
We have some pretty heavy heavy winds here today knocked over our Grinch and the elf ladder but the darn cats spilled my garlic rooting on the counter water spilled garlic aroma all over
I saw that front on weather radar this morning! It looked like a big one
 
Been raining steady here since before I got up ~8am. 58° outside, so not cold. it's all coming from the SW and moving NE. Looks like more over the rest of the day. Looks like off & on clouds, rain for the next 3 days. No sun forecast till Saturday. I have a Dr. appt tomorrow so have to drive over to Shreveport, LA. (VA Hosp) So hope it's just cloudy and not raining. That will be a miserable drive in rain.

Looks like you folks in the NW, WA & OR are getting hammered right now. Hang on Penny... don't get blown away on us.

the guys are tasking care of outside not having me out poor BF feeling low being lazy Not really kripes he is 71 still tries to take care of me and I am not the easiest that way :gig
