Ok... how many of you have been to a wedding recently???

I am helping put together, and pay for (:lau how did that part happen??) A wedding. Son #2 is getting married the end of the summer. And bride wanted to marry here, instead of at her parents place.....

so... I have us only penciled in for the cake... we have a week to nail that down.

bride wants a nice cake... but isn't sure what kind of nice.

I told her, fine... give up on exactly what the cake is going to look like... and just give me a ball park, so cake lady can give an estimate, I can pay the 50% and it can be all good, and I don't have to worry about who will make the cake.

but... silly young people, too many choices, they aren't sure what they want. They do like the idea of having cake leftovers to eat over the next couple of days after the wedding.

Oh, we will only have 17 to 20 people at the wedding. Unless a bunch of people crash... which is possible, but unlikely. :hide

The thought is... small (12 person) fancy/pretty gluten free cake and then full of gluten..... what? Choices are cupcakes, macaroons, chocolate chip cookies, and fancy decorated sugar cookies.

Only the groom (my son) is celiac, everyone else can eat gluten. Celic groom is happy with there being a bunch of gluten-full desserts.

I was kind of thinking macaroons and cookies... because then I can have several.....

But maybe "people" would like cupcakes.... I should ask cake lady if she does mini cupcakes... and ask what Spouse wants... spouse is opinionated.

My boys don't care... as long as there is sugar, they will be happy. Not sure about my mom... but she will probably hate everything, so I won't bother asking her.

Anyone been to a wedding lately? Thoughts on a "dessert table"? What would you all choose between cupcakes, macaroons, chocolate chip cookies, and fancy frosted sugar cookies? Would you want some of each? Only 1 or 2 of the above? Which ones???

Other things... it will be a full evening meal, kind of.

Either the bride or my spouse will make a huge pot of cream soup.

Then they want ... whatever that fancy name is for cold meats, cheeses and crackers.

A salmon dip made by my spouse, spinach and artichoke dip from grocery store and franks red hot chicken and cheese casserole dip thing.

Then the fancy wedding cake and desserts.

I wonder if I should add a salad. Hummm

I would say cupcakes and the macaroons. Cupcakes seem to be quite popular lately lol
 
I have one go-to GF chocolate cake recipe that is very rich and decadent. I don't make too many desserts, as I have all of hubby's sweet teeth. (IE, I have a sweet tooth; him, not so much, and I end up eating waaay too much of it.)

I like the idea of different things in small pieces, so people can try a variety. But that's more work.

Keep in mind that everyone will be wearing expensive and expensive-to-clean clothes. Small bits are neater to eat and less likely to spill down someone's front. Creamy, gooey, juicy = sloppy, messy, drippy.

Though that would save money... I want only minimal cooking to do...


Enough to think about with the wedding, I want to minimize what needs to be done last minute.

Not to worry, this is a Alaskan wedding, so the clothes will be stain-free, hole free, and maybe ironed... as in I am thinking of buying new button down church shirts for all the boys (actually, I was thinking to buy those no-iron ones).

We are used to wearing second hand, and garage sale clothes. Holes, stains, and FREE.


So, yes, an upgrade for the wedding... but all will be machine washable... no shiny sparkly things.
