Leftovers are such time savers. I love having a roast as we all pick at it until it is almost bones and ready for soup. I picked over two chickens today, and tossed the scraps and bones to the chickens. Picked clean!! Recycling at it's best.

Pea soup is yummy! I don't eat it any more, NOT LC, but the kids eat it up and in the fall it hits the spot.I don't cook often, but am simmering a pot of homemade, split pea soup as I type this (yea, it's 1:43 am!). Since I'm single, this will last me a week or more, which I LOVE! Cook once, eat for two weeks. I'm really thinking about processing a couple of my roos to have fresh chicken too. I've never eaten my own before, but am really wanting to try. I'm even going to raise some extras next spring, (will actually be HOPING for roosters) to fill the freezer.
NOthing like turkey leftovers!! We eat turkey all year long. Roast once overnight and eat all week. Yum.![]()
Just me an DH at home, last kid moved out 2 years ago, one of the girls at work ( she is 30ish ) was afraid I would have empty nest syndrome when he moved out.
