I do have a pressure canner, I'll look and see if the book that came with it recommends anything for pumpkin. I don't know why I didn't think of that.

It's not as bad as it seems. I was very nervous the first few times but have gotten used to it now. My biggest complaint is that it takes forever, time-wise.

Most of the stuff that I like to make can be waterbath canned. Glad I have the pressure one though, for things like stock.

I like it better than water bath canning. My pressure canner is smaller and the pressure method uses less water, so it comes to a boil faster. I'm going to use it for water bath canning of jams, jellies, and pickles from now on. My water bath canner has been sent to the attic to stay.

I'm going to can pumpkin for pies. I book I read said to process it for 40 minutes under 10 lbs pressure for altitudes below 1000 feet; 15 psi for higher altitudes.
 
So relieved to hear the puppy is recovering. Thank you for taking such good care of the little thing. Why can't people just spay/neuter their animals to spare the unwanted babies all this? <sigh>

Thanks for the recipe. I've made so much custard trying to use up eggs, I'm getting kinda tired of it. The coconut custard should be a nice change.

You're welcome. I plan to use this one again. I can share a few more egg recipes, if you'd like; Butterscotch Pie, Cheese Souffle, Lemon Pudding Cake, and Crab Quiche.
 
Not fond of coconut, but I just LOVE custard! For pickled eggs, I cheat...just throw them in a jar with some pickle juice, LOL. They're really tasty and pretty in pickled beet juice.

SCG I am sure I will find my way back to Maine someday for a visit. I would love to go to the Yarmouth Clam Festival at least one more time. It is so much fun.

What ever works!!!! I'm always up for a new recipe to try--even if it is simple! I love custards too. Especially as I can use eggs to thicken it. Lemon curd, vanilla pudding. Yum.
