Tonight's dinner was shakshuka. The ingredients are:

  • 2 tablespoons olive oil
  • 1 bunch green onions, diced
  • 4 garlic cloves, finely chopped
  • 2 teaspoon paprika
  • 1 teaspoon cumin
  • ¼ teaspoon chili powder
  • 1 28-ounce can diced tomatoes
  • 6 large eggs
  • salt and pepper, to taste
  • 1 small bunch fresh cilantro, chopped
  • 1 small bunch fresh parsley, chopped
  • 1 Tbsp honey
SIngle serving, with fresh homemade sourdough bread:

I've heard of this dish, but didn't know how it was made. Looks great.

Thank you! I understand it is typically served as a breakfast dish in the Mediterranean area, Egypt and so forth. My recipe did not call for honey, but I added it to tame down the acidity of the tomatoes. Sugar might work, too. I might add black olives next time, too.

Yes. When the tomatoes are bubbling merrily, you make a little divot and gently break them in (or pour them in from a bowl) as if you are poaching them. Salt and pepper them, reduce heat, cover and cook for 5-8 minutes or just until the whites are set. I accidentally overcooked mine a bit, they are best when the yolk is still runny. Did I say garnish with chopped cilantro, parsley and/or green onion tops (or chives)? I also sprinkled a little shredded cheese on mine, but it didn't go as well with the flavors as I expected it to.
