"Carnitas breakfast burrito"
Ingredients: burrito-size flour tortilla (heated directly on stove burner), crockpot carnitas (pan-fried until crispy), homemade Spanish rice, whole pinto beans, sharp cheddar cheese, "poppy egg", salsa, sour cream, cilantro and green onion.

Bread pudding
5 eggs
2 cups milk
3/4 c white sugar
1/4 c brown sugar
8 cups bread cubes ( I've used white, wheat, cinnamon rolls or even raisin bread)
1 tsp cinnamon (or pumpkin spice)
2 tsp vanilla
Mini chocolate chips (to taste sprinkled on top, optional)
Chopped pecans to taste (optional)

Preheat oven to 350. Grease 9 by 9 pan. Beat eggs till thoroughly combined, set to side. Cube bread and put in greased pan, set to the side. Heat 1 c milk and both sugars in 4 cup measuring cup (microwave about a minute or more). Just enough to melt the sugars. Mix well. Add the other cup of cold milk to cool everything. Add vanilla and cinnamon. Add your BEAT eggs. Mix everything thoroughly. Pour over bread. Gently press bread down so it's all wet. Sprinkle with pecans (optional). Sprinkle desired amount of mini chips.

Bake 350 for 40 - 45 minutes.

To all those bread bakers. I usually use home made breads for this. So go for that or just use store bought. It can even be stale bread.
 
Mae's gourmet breakfast burrito
Ingredients:
Tomato basil tortilla
Bacon cheddar cheese
2 scrambled eggs seasoned with salt and pepper
Sriracha sauce and ranch dressing 1:2 ratio (usually mixed together)
Orange zest and juice of half of a cuties orange
Fresh basil and chives to top
Secure with toothpicks

A favorite breakfast dish for hubby and I :drool

Tonight's dinner was shakshuka. The ingredients are:

  • 2 tablespoons olive oil
  • 1 bunch green onions, diced
  • 4 garlic cloves, finely chopped
  • 2 teaspoon paprika
  • 1 teaspoon cumin
  • ¼ teaspoon chili powder
  • 1 28-ounce can diced tomatoes
  • 6 large eggs
  • salt and pepper, to taste
  • 1 small bunch fresh cilantro, chopped
  • 1 small bunch fresh parsley, chopped
  • 1 Tbsp honey

So many decisions, but I think this one's a good one for Entry 4

"Loco Moco"

Basic ingredients: white rice, hamburger patties, brown gravy, runny egg

My version is what I call "loose style" (making a meat gravy, instead of hamburger patties and separate brown gravy): sauté diced onions, minced garlic and 1-2lbs ground beef (I often also add diced carrots and sliced mushrooms if I have them, they're included in the pictured version). When the meat is browned, sprinkle 2-3 tablespoons flour evenly over everything, stir up and cook another minute or two. Stir in 2-3 spoons of Better Than Bouillon beef flavor. Add 2-3c water or broth, stir slowly at first so flour doesn't clump, make it as thin/thick as you like (sometimes I'll also add a cornstarch slurry). Near the end I add some dark soy sauce for darker color of the gravy and for umami flavor. Always serve over white rice and a "poppy egg" on top.
