I use a industrial expensive thermometer (I think it was around $200) and no I didn't buy it. I'm borrowing it from work.... it could be a long term borrowing 
For a hygrometer I use a really cheap one.... its close enough for me +/- 5% but I have the luxury of having reasonably stable outside humidity and my incubator humidity is very easy to keep stable
