Not sure what fruitcake is like on your side of the pond but I have a vegan Christmas cake recipe that works well with GF flour, and always went down well when I did a lot of baking for community events, if you want me to try and dig it out? If anything it used to turn out lighter than the non-vegan/GF version.Fruitcake = dense and heavy.
