Gin is made from juniper berries, I think. I wouldn't know what it tastes like, though.

Not sure what fruitcake is like on your side of the pond but I have a vegan Christmas cake recipe that works well with GF flour, and always went down well when I did a lot of baking for community events, if you want me to try and dig it out? If anything it used to turn out lighter than the non-vegan/GF version.

I don't think even a regular fruitcake could rise even if it tried, with all those nuts and dried fruit in it, so I don't think it would matter much if you used GF flour...

Pine needle tea is very popular as a health drink. I haven't tried it either
