I have a bunch sold, and am going to rotisserie smoke them ~ them food save them, for salad meat, duck salad sandwiches, omelette's, and soooo much more. Ever since I had a perfectly cooked duck, Guinea, chukar, rabbit, & goose I am sold, & chicken is just hog so tasty anymore. I am buying a whole hog with lots of sausage & just checked into a sausage make / meat grinder/slicer
& am going to HOMEmake some gourmet duck/goose/smoked pork bratwurst! I saw some recipes for some

Caribbean~ filled with roasted chicken, rice, and plantains. Sweet and spicy.

MOLE~ taste the chocolate, then cumin, and finally chilies. It contains fragrant guajillo and ancho chilies.

Cajun-spiced Boudin style sausage is a beef and pork link cooked in duck stock with plenty of chilies and green onions & rice for a complete

Another Mexican-inspired sausage ~ light in color, but bold with Southwestern flavor! It has a kick of heat, and is teeming with whole roasted corn kernels, lime, and brined jalapeños.

Sausage is bursting with cilantro, Serrano chilies, and a hint of beer. It’s made with chicken and turkey and has a Southwestern center with a distinct flavor.

Duck Chorizo ~ cumin, chilies, vinegar, and finishes with a minty, spicy taste.
Wow. Must have your recipes. Hubby would go nuts to try them! (I'm not the chef of the house, I just grow the stuff).
YUM. I've only tried duck once and it was just a bite of Muscovy, but I think I would like it. I like the dark meat on chicken, turkey, etc.

I just got 18 Serama eggs in the mail today and NONE were broken, which was really a nice surprise. I only have a little Brinsea Mini with 12 spots in the auto turner. I'm debating whether I should put them all in and hand turn them or find someone to incubate the 6 I don't have room for. Any thoughts on hand turning? I'm afraid I might screw up the whole batch if I try it.
Muscovy is some tasty stuff. I've still got a couple in the freezer.
Everyone remember Spraddle Legs? She's no longer with us. I'm glad she's no longer in pain but I will dearly miss her. I'd gotten so attached trying to save her. I know's it's just a turkey but she was more than that to me. It's sad I was sad when the gosling died but didn't cry at all yet the poor turkey that deserved to be put out of it's misery is gone and I can't quit sobbing. It's gonna be a long day

I'm so sorry. It's hard to lose an animal you've bonded with.
Sure will this fall & let you know how they turn or not turn out ! I write everything down, bcuz I am making a cookbook.

My family ALWAYS knows there is no contest that I get the Turkey leg at Thanksgiving ~ I am a dark meat lover, Me ~ You ~ Goin Quackkers ~ & Eye

will have a date with Chinatown !

I have never hand turned eggs... I will incubate them for you if you want? I am not that far from you.

NEVER apologize for the loss of any animal ! We are here for you, we know how hard you tried & that little turk knew it. I love my turks soooo much, and I think they are so funny & cute, full of personality. I love it when they are young and they have that cute chirp peep thing, how they like to be near you. Turkeys from babies and even as adults are very friendly & curious. My heart goes out to you Kev.

Awe..... Love the pics!
I hatched 4 of my 5 Cayuga eggs last night too! One left to hatch & then tomorrow the craziness starts..... 74 Pekin & 28 Turkeys! (they are pipping right now)

I've got a hatch in progress, but there was a bizarre mishap while I was at work. Hubby opened the hatcher to try to help the wrong way pipper. He had a flashlight tucked under his chin so he could try to find the bill, but he dropped it and it mushed one of the other eggs. Neither one made it. He feels terrible. I went up there to survey the carnage and there was a newly hatched baby. Something to smile about at least.

Pekins and surprise eggs from my flock going now. I need several pekins to hatch.

How much do you think a 7 year old girl & 10 year old boy goes for on Ebay???
Won't sell. I tried selling mine to the gypsies and they told me they wouldn't even take them if *I* paid!
