Yeah it is easier from what I have seen in crossings of other folks flocks to get the tail up then down, main thing I would focus on for squirrel tail besides angle of tail, is making sure it is not leaning right or left. I think a high carriage in birds would help accent the look too.
 
It shouldn't be a problem selcting for the squirrel tail with the various breeds that you are using. In my experience it's a lot easier to get a high tail than it is to get a low tail. Nice looking fowl.
