I have an unplanned Orpington cockerel from the hatchery and he just attacked my black sexlink hen today, almost killed her. Not sure what to do with him.

Remove him from the flock.... permanently.

In that case i'd cull immediately. A cockerel outright attacking and nearly killing a hen is different than normal rowdy cockerel behavior
