Honestly in all this talk of rooster aggression, here's just my opinion - If it attacks aggressively more than once, kill it or sell it. Sorry, just my opinion. Aggression in most cases is genetic, and is much too common already in hatchery stock Polish. I recently put down my Crele project rooster, loved him and he was a SUPERB flock protector, always attacked the threat and never blamed the hen, always was a quiet gentleman, but, he had a weird act of dominance over me that eventually escalated to actually attacking me. Not gonna put up with that. His previous owner mentioned challenging her, so, sounds like true aggression to me. I saved his beautiful pelt though.
Personally the only case in which I could see not getting rid of an aggressive rooster is if you had no other choice and he truly had some nice qualities you will want. If I only had one Tolbunt and couldn't afford more in the near future, but he was a meanie, I'd try him. See how his offspring all turn out. But otherwise I'd put him down, not even sell him. I don't like passing on aggression for someone else to have to deal with, then breed on to more owners.
