Too late for butcher?

I have two 2 New Hampshire Red cockerels that are about 7 months old, which I've had little luck getting any interest in sending to someone else's home. I've heard that butcher time for birds you want to eat is somewhere near 4-5 months...please correct me if I'm wrong. Is it "too late" for putting these birds in my freezer instead? A little tougher? Sure, but it shouldn't be that much tougher, right?
 
It's never too late to butcher. They may be a bit tougher, but just cook them low and slow. I butcher 2-3 year old laying hens. I pressure-can them and that makes them nice and tender.
