Sell/give them away (sounds like you are already doing this)
Hard-boiled eggs are an exceptionally nutritious treat. It has all the nutrients to grow a chicken from a few cells to a baby chick. I peel and crush mine and put them out in a couple of bowls. The girls go nuts for them. Don't do this all the time, but it is an excellent treat.
If you have dogs (maybe cats?), then eggs can be a very nutritious part of their diet.
Chickens stop or greatly reduce laying eggs in winter. After my first winter, I figured it was crazy to get store-bought eggs when I produced better quality ones. There are multiple ways to preserve eggs. Here is my favorite: water glassing.
I think food banks would also be glad for any extra eggs you give them too if you still have too many after @TooCheep's suggestions. If you have any homeless near you you can boil a few carton and give them out too
