Ma father used to make these (he was Austrian) and he always made way more than we could eat. My mother made brothy beef soup, rolled the pancakes and sliced them into soup noodles, just pour the soup over the noodles. The most delicious thing ever. Also turned them into something like blintzes, filled with jam or just cinnamon sugar. Now i want to go make some!I love making German Pancakes when I’ve got excess eggs. But I must admit 60-70 is a lot to start with. You’d have to make a lot of these!
