Too many eggs! Suggestions?

I love making German Pancakes when I’ve got excess eggs. But I must admit 60-70 is a lot to start with. You’d have to make a lot of these!
Ma father used to make these (he was Austrian) and he always made way more than we could eat. My mother made brothy beef soup, rolled the pancakes and sliced them into soup noodles, just pour the soup over the noodles. The most delicious thing ever. Also turned them into something like blintzes, filled with jam or just cinnamon sugar. Now i want to go make some!
 
I make quiche: Quiche Lorraine, spinach quiche, crustless quiche - there are dozens of variations, like crab, shrimp, bacon, etc. Do a search for "kinds of quiche" recipes and you'll find lots., Most quiche freezes well, so you have an instant meal for days when you just don't want to cook! Also, baked custard is nice. I also feed scrambled eggs back to the chickens. not too many, but it's a favorite treat.

Someone posted a recipe for boiled egg based chocolate pudding on here somewhere, you might be able to find it.
We use up extras as "soy eggs" (boiled and peeled soaked in soy sauce) angel food cake, and custard (usually made together 😋) angel food cake can take 1.5 dzn at a time!
We also tend to like bread pudding and French toast, I bake bread so we often have some needing to be used up and it takes care of eggs and bread at the same time while making it something different. (I increase the eggs and decrease the milk in those recipes)

This probably isn't the same recipe, but I've tried this one and can recommend it. Depending on what sweetener you use (gee, I'm fresh out of monk fruit powder :D) you may have to play with your sweetener amounts, but it's really easy ... and pretty danged good!

 
Here are a few of our favorite recipes that use a lot of eggs.

Egg bread - uses 10 eggs. The dough is extremally sticky so I recommend using a stand mixer for kneading if you have one. We use the extra egg whites to make Meringue cookies. https://www.allrecipes.com/recipe/6...are-recipe&utm_content=20220401&utm_term=6879

Tomato Egg stir fry is a good scrambled egg variation. We don't have a wok, but use a regular skillet.

Homemade lemon curd uses 11 eggs. This is a canning recipe, but the jars can also be frozen. Canned lemon curd is shelf stable for 3-4 months, but frozen curd lasts up to a year. We prefer the texture of the frozen and thawed curd to the canned lemon curd.

We also started making chiffon cakes for all cake occasions as they typically use 7-8 eggs each😂
 
Thank you everyone for all the recipes to help me use my eggs. I will have to get busy when I get home today. I probably have about 8 dozen eggs sitting on the table.
