I understand the FDA's concern on pickled eggs as well as an individual's but I can assure you that's I have had them in the pantry for 6 to 8 months befor pulled them out and placed them in the fridge the night befor eatting them and the only thing that was diff. about them than the fresher ones was that they were even better.
 
I agree. I've got several recipes, one from Emeril Lagasse (love him or hate him) that say to BWB can the eggs after adding the pickling liquid.

As the Canning Forum that I'm a member of says, the FDA just doesn't make recommendations possibly because they don't have enough data. Or perhaps the ability to sterilize the food is unreliable. Previously, they used to let home canners BWB pumpkin butter but now they recommend against it because they have studies showing differences in viscosity can cause differences in heat transfer which makes the process unreliable. Better to err on the side of safety in these cases.

I'm going to get the stuff I need for this and should have enough eggs to try a small jar this weekend. I'm not making alot till I know what i'm doing and what will taste good to me.

no prob. Critter its like anything else just add your flavor and make em how you want. Enjoy em I know my family loves them and its quite a pleasure watchin them fight over them when we start to get low.

You have to apply for membership, but it's not a big deal. It's mostly to guard against spam. The folks are just as friendly and helpful as they are here. I recommend lurking there for a bit. Just like here, you'll catch the bug and your garden planning over the winter will take off. Except here, it's quail cages...

There's a section of recipes that members have posted that's really great.

I just pickled some eggs, a few quail eggs and a few chicken eggs together, and let them sit. I've never had pickled eggs before. I made them so when we had guest over I could share the bounty. Alternately, if I don't like pickled eggs, I could get rid of them quicker! They were good, but I need to work on the recipe a bit. It called for red vinegar and pickled hot peppers which is unlike any other recipe I've seen. It came from my mom so I thought I'd start off with her recipe. I'm going to try some other basic recipes that others have posted here and see what works best.

Well, I made a list last night, and wanted to get all I needed. Well I got to the store, and went inside and realized my list was in the car.

I remembered it all except vinegar, but have some here. I'm anxious to try them.

My guys are not real crazy about hot peppers, so I got an Anaheim pepper to try instead of a real hot one..
