Turkey Talk for 2014

Hello all, I was thinking about raising Turkeys this year. How difficult is it to dispatch and process them if I get extras? I'm used to processing my muscovy ducks and chickens.

I did it one year then found a local processor who charges $12 up to 20lbs. Mine almost always go over weight but it is worth it to me. Drop them off the the morning and pick them up in an ice chest in the afternoon. If I sell two it pays for the processing of six. I usually have a waiting list for the birds so it's not hard to sell two or three and keep the rest for holidays and special occasions. I will be cooking a 32lb one this week just cuz.

If you can process a chicken you can do a turkey. They are just bigger & easier to get your hands inside to get everything out. Broad breasteds will have a LOT of fat if finished out properly. Compare them to a huge cx broiler.
 
Okay, here's my stupid question of the day, Lol. I want beautiful turkeys that are as interesting and fun to watch as my chickens but that won't get uber huge. I have a small oven.. what do y'all recomend?

Midget Whites are quite small

Toms reach 13 lbs, hens 8-10 lbs
