Is the mostly white rabbit a rex as well? I was given a doe with that coloration that was supposed to be 2 months old but gave birth to 7 healthy kits 28 days after we brought her home. I don't know what the buck looks like but the buns are all broken and look like the bun in your picture. How much do they weigh when fully grown?

All three of the rabbits in my pictures are actually Mini Rex. The doe you are asking about is a tricolor, which is a broken harlequin (you can see little bits of black on her ears and back.) Mini Rex breeders employ the dwarfing gene to get the 4-pound adult animal described in the breed standard, but there are always some animals that miss out on that gene. This doe is one of them, she would be called a "false dwarf" or "brood doe" by most of the people I know. She is a pedigreed Mini Rex, and yet tips the scale at over 5 pounds. Standard-sized Rex rabbits start in the 7-pound range, and go up from there.

she's just pulling more and more fur and taking it to were she had her babies at. Why?

As Asher said, your doe might possibly have a few more babies in there. On the other hand, she may just be pulling more fur. Particularly when the weather is cold, my does will continue to add fur to the nest for up to a week after they kindle.
