UPDATE: purple hull jelly AND watermelon rind pickles!

You can make watermelon rind preserves too. Sweet with cinnamon. I'll have to dig out some of my really old recipes from my old great aunts.
 
So very pretty!! Thanks so much for the recipe.....watermelon rinds??OH, thats a MUST try! I am hopeing to get a recipe tonight from a lady...Dandelion jelly? Useing the flowers?? sounds interesting enough....I will have to try it.....when I get the recipe.

I've made two batches of this this summer and have a watermelon waiting to be done up for the third.

WATERMELON RIND PICKLES

3 #’s of the white part of rind-cubed
5c sugar
2 c Cider Vinegar
1c Water
2T Whole Cloves
1 ½ T Whole Allspice
2T Stick Cinnamon
1 Lemon sliced

Let cubes soak overnight in large pot in salted water to cover.
Drain.
Cover with fresh cold water.
Bring to boil and cook over low heat until tender.
Drain.
Combine rest of the ingredients and stir over medium heat until tender.
Boil 5 minutes.
Add cubes simmer until transparent-About 15 minutes.
Remove spices and pack pickles into jars and process.
 
Thanks! How much salt is used to make "salted water." Yup, I'm a total n00b at all this.

Update: I have just made FarmerKitty's watermelon-rind pickles. OMG. There was about a half-pint left over after I had them all jarred up, and before I got out the smaller jar, I took "just a nibble" of one to taste.

They never made it into the jar--I gobbled them all up, standing up in the kitchen, right out of the pot. WOW, these are good! Thank you for sharing!

Those look really nice all jarred up. They would make a great gift - and make for some great conversation, too.LOL

I've already copied this to my canning recipe list. Would you tell me how much salt for the water, please........and how long did you process?

I just throw in some salt but, I would guess 1/4 - 1/3 cup.

Waterbath-bring to boil and process for 10 min.

I found another recipe that called for 1/4 cup of pickling salt per quart of water, and that's what I went with. It took 2 quarts of water to cover the pieces, so I used 1/2 cup of pickling salt.
