Quite honestly, I would just tell her you are all sold out. Tell her that a few times and she will either pay up her old bill, or disappear into the bad customer abyss and stop asking. If she did stop asking without paying up, I would probably send her an email or leave her a note. Just something "friendly" saying, hey just wanted to know if you were able to pay the remainder of your egg balance? Please let me know asap!
I would still stop selling her eggs though, unless she pays up her balance and then comes to pick them up, money in hand.

If she wants to buy eggs, she needs to pay you what she owes you, and then pay for the new eggs, and then she can have the eggs.
I gave a few customers one free dozen eggs. I say, 'the first dozen is free, then they are three dollars per dozen'.
I am going to suggest that your neighbor doesn't have this little concept firmly in mind about how you buy things. With that in mind, I think you are better off keeping your communication with her, very, very, very simple.
Does she also go to MacDonald's, and say, 'I will pay you Tuesday for a hamburger today'. Does she go to Walmart and say, 'Oh, a Silver Surfer video! Twenty dollars. Ms. Clerk, I will pay for this tomorrow'.
Probably not. That is because they will call the police and have her arrested if she tries to leave without paying. The reason she does it to you is, you don't call the police when she doesn't pay for something.
Now.
I want you to think about all the starving children in Sri Lanka, Indoensia, China, Korea, and all the South American countries. Oh and Russia. And I want you to think, how angry they all would be if they knew that you were giving free eggs to this lady who already has plenty to eat, for nothing. Can you just imagine how upset they would be? Do you know how much one of those kids would like to have just ONE egg? What would they say? Of course! They would say, 'Don't give those eggs to that woman! Send them to us!'

I sent her an email today with an invoice, frankly I doubt she will answer it. but I plan on telling both girls in my area who sell eggs all about her, we talk all the time, so I do not plan on allowing her to move on to them and take advantage of them too or at least try. but I highly doubt she will go to them cause the eggs are more money.

I pretty much said this to my dh when I saw the three dollars she left for the eggs. we will see what she does with that email I sent her. but both dh and I don't think she will answer it nor will she pay up either.
Live and learn....I won't stop being nice to people because of a few bad seeds/experiences, but it does seem like the last year in general being nice to people has not been all its supposed to be. It looks like people are just becoming more rude and inconsiderate as time goes by. Funny enough I am seeing a pattern from previous posts of me rambling about this friend or that person, they are all city folks from down south....

Sorry I was at work pretty much all week, until tonight when I landed back in the hospital. I swear the doctors are playing a guessing game with me. I now have Differential vertigo??!!!! Off for another week from work. the dizzy spells are scary though...
anyhow she hasn't bothered to email me back at all. nor has she asked me for eggs yet, which I doubt she will ask again. I have since gained 2 more customers, one the other day and one this past sunday. the one this sunday refuses to pay anything less than 4.00 per dozen and even gave me an extra dollar for delivering the eggs to her as she cannot drive. As previously mentioned I only charge 2.50/dozen. I am happy that some customers do realize that fresh eggs are of wayyy better quality and worth their money
