Venison....

Two in the freezer, one 6 pt one doe. I should be able to put another one in the freezer this week. Been waiting on the big boy. My wife never liked venison, till I got one coming out of an apple orchard. Now she wants at least two in the freezer every year.
 
Hubby has a 9pt and 2 doe down, I'm at nothing. One of the club gave us a doe. I might make some time out for muzzleloader, but problably not.

Speaking of jerky, I suppose I better haul some meat out and get some going. I used to get all crazy with mixing up recipes, but I've found one I LOVE - and it's easy, because it's a bottle

I use one bottle of regular Allegro Marinade, and one bottle of Allegro Hickory Marinade. Cut up venison (or wild goose, or....) into thin strips, and marinade in the fridge for a day or two. Lay out the strips on my handy dandy Nesco food dehydrator, grind some coarse black pepper over them, and dry per directions.

Well I spoke too soon. I got that same doe I missed last night....tonight. They came in again for the acorns, this time I used my crossbow as I was so ticked about missing with the shotgun.

Will get some pics up after I check it in.
 
Boy wonder just called and he got a spike! Its his first one ever! Clean shot, clean kill on his very first one.. I am one proud mamma. He is probably going to be hard to live with

Guess I better buy a freezer first thing tomorrow! Anybody know about how much meat we will get from a spike? We are new to this.

You will get quite a bit from a spike, that's awesome, how old is he? Make sure to take plenty of pictures.

Here is some pics of the doe I got tonight. I decided to use a crossbow tonight instead of a gun. I missed yesterday with the gun, I feel more confident shooting the bow. Just got it tagged in, hung up, and washed out. Tomorrow I will skin it and take all the meat off of the bone. It was at the bottom of a raveen (sp?), and I had the girlfriend help me drag it all the way out. I almost died laughing because we would go like five feet and had to stop because it was such a work out for both of us. When we got to the top she actually threw up from over exerting herself. I felt bad but couldn't help but laugh, I told her now she knows what I go through to get those deer sausages, jerky, ground meat, summer sausage, ect. I guess she will have a new appreciation for venison. I got a pic of her too... she would kill me if she found out this was on the web.

Tomorrow I will take some pics of dressing it out.... kinda show how I do it I guess. Everyone has there own way but will show what has worked for me.

Oldest son, age 14, got his 5th deer a few weeks back. A nice 2x2 blacktail during modern rfile season.

I'm hunting muzzle loader this season, and have another 11 days left.
 
Got my first one today. Well I didn't shoot it, it was given to me. A friend of mine works for a game ranch and they have to shoot over 100 deer this year for management purposes. They cannot wast any of them or they run the risk of losing their management tags. Guess who gets all the deer meat they want! When DW and I were skinning him I made the mistake of throwing the hens a piece of fat and they all came running! Then it was DW telling them it was not a buffet they had to wait for us to throw them something!
