Want quail for meat. How should I start?

Would you recommend buying a digital thermometer/hydrometer to put to in additional to any measuring equipment that's built into the incubator?

I have a $15 battery one in mine, I'm in a desert and the outside humidity is about 15-20%, so i use it mostly to track that.

I'm fairly new here and have been reading tons and tons!

I'm looking for an incubator too.
The Brinsea 20 sounds great, but I was wondering how it opens?
Does the whole top come off? I'm worried if hatching in it, the little quail may dart out when it's opened to get them out.
The last thing I want to do is chase those fast , fuzzy , little stinkers around a room!

I've hatched a few quail in the past and had good results with the Havo bator .
I see GQF has the still air (model 1602N) reasonably priced, and I was thinking of getting that for now, just to get me started and then would have it later to use for hatching and the Brinsea 20, for incubating.

All the feed stores around here have the Little Giant, and I've read too many bad things about it. and really don't want that one.

I'm not crazy about having to order online, I like to see and touch what i'm buying, but in this case I'll have no choice and want to make sure I get a good one.

I currently have 8 Jumbo Brown that I got at 5 days old, (bout 2 weeks old now)
and one little Button, who is about a week old. (got him bout 1 day old)
And they've been so much fun! I can't wait to get eggs and start hatching!
 
The clear part is the lid, the yellow is the base. They egg tray is about 2 inches lower than the mid point, so they'd have to climb out to run amok (to be fair we do this as a pair, he opens i lift),

Just from the pic on the web it didn't look like much diff between the tray and edge of base as far as height.

I'm sure i'll have help now that you mention it, between hubby and my son!
The trick will be keeping them from spoiling the quail I intend to eat. lol
