There are a couple of different issues here, first refrigeration. Mother Earth News did a good study on this, and the article can easily be found with a search. Eggs even washed will keep for nearly a month on the counter. Of course refrigeration is better. You will notice in that article, that no where does it state that you "should not wash eggs that you will consume", nor does it say that you should "not refrigerate eggs", nor does it say that once you refrigerate eggs you can't keep them out of refrigeration. Those are all common uneducated wives tales so to speak. Most importantly though is the issue of washing. It's not "potential bacteria" that is a concern. Bacteria exists, it's in ALL feces and regardless of whether or not you can see it, it exists on the surface of unwashed eggs. Refrigeration does not kill it, it only slows multiplication. If you touch dirty eggs whether or not you see that dirt, and then touch something else, you move the bacteria. Washing eggs that you will consume is important and should be done immediately after collecting regardless of whether or not you have hot water available. Any attempt at cleanliness is better than no attempt at cleanliness. Putting dirty eggs in the same location as other food is just plain stupidity.Thank you. So no need to wash them. But there is a protective coating. Then once washed, they should go in fridge? Do you know how long they can stay out of fridge without washing?

Hello and welcome!I have heard...... fresh eggs have some sorr of film on them and they should be washed even though they look clean. Then refrigerate. Is this true? Im just wondering how long they can be kept out of the fridge before washing them?
