Why bother ?
If you are going to raise meat birds, do it is early spring, they cannot 'do' heat, and do a order of 25 or more from a hatchery, like McMurray.
And they eat and eat and eat, 100X more than layers.
We butchered the last of ours 2 weeks ago & decidedly will not do anymore, as feed is so expensive, it is purposeless to do so.
And ducks, on grass, build more meat faster with far far far less feed.
Far less.
Turkeys, grow even faster, with more meat, and will eat more grass as well.
Cornish meat birds will eat little except parking their nasty butts in front of a feeder & waiting for high protein feed, aka: Flockraiser or Turkey/game bird starter...

You will hate it, they stink BAD they require feed several times a day and I swear they poop out more than they eat, and they can eat you out of house & home, and feed for us retail is way too expensive.I can only have 8 chickens at any one time in Bothell, so I'm pretty much stuck with that. I'm already maxed out with "additional fowl" so only chickens will do. 8 birds in early spring should at least last us through early summer, and keep the mess/smell down.
Organic chicken at the grocery store around here seems to cost in the neighborhood of $20/bird. I'm sure I could come in at a little less than that, and have birds that had a much more humane life and death.

I don't think 8 is a bad number. Commercial meat gives me a stomachache, so I completely understand why you'd want to raise your own. Some of the bigger feed store chains were selling broilers in the spring. You can check around in February or March and probably pick some up. I am not familiar with your area, but it is close enough to metropolis that someone is likely to carry meat birds. They were cheap, too, around $3 each. That is a great idea, and capons do not crow !You might want to invest in a small incubator, and teach yourself to caponize. You could do a few eggs at a time, and you wouldn't need to hassle with those nasty Cornish crosses. The meat (so I've been told) would be very high quality also.

I have yet to do a capon, something I have always wanted to do, and never seem to do, a pity as I always have tons of cockerels.
