I made some pickled horseradish today with the root I had left from last year. Figured I should use it since this year's horseradish plant is about ready to dig up.

It was easy to do. Chopped it into cubes and ran it through the food processor. Glad I save my little Beaver Horseradish jars.

I'll check that out. I need to dig out my potted horseradish and remove some. It's also invaded the garden from when I had the pot out there.

Yeah, horseradish can be hard to get rid of if you let it get out of hand. I have mine growing in a half of an old 55 gallon drum filled with soil. I packed a layer of rock and gravel in the bottom for drainage and to prevent roots from growing through. This is the second year I've used it for growing horsey weed.
