More Salsa!

Got another 8 pints done, and I think that'll be enough to last me until it's time to make salsa next year. 26 pints.

I chopped everything fine this time so it'll be better for dipping chips. And I didn't use any ripe tomatoes. Most were half ripe, a few were green. Still tastes good, but a little on the tart side. It'll work.

And I used the last of my pint jars. All I have left now is a dozen quart and a dozen half pinters. Not sure what I'll put in them. Maybe whole tomatoes in the quarts.

I made salsa yesterday. After all the mess I ended up with 2 pints! I have to find a quicker way!

I hear you about the mess. I just finished washing and drying 4 big glass bowls, a 2 quart Pyrex measuring cup, a set of 3 stackable stainless steel bowls, a food processor, a Kitchen Aid veggie shredder attachment, a big stock pot and lid, several utensils, knives, stainless measuring cups, 2 half gallon storage containers, and spoons and eating bowls. The big processing pot still has water in it, but it'll need a rinse and dry.

It's all put away now. I'll have a small load of towels to wash too, but not before I use a clean towel to squeeze the juice out of a bunch of shredded, salted zucchini. I might make some zucchini fritters for the freezer today too. Or I might just freeze portions of the shredded zuke as it is. That would be a lot easier.
