Sounds like a good relish. How will you use it?
I'll use it in things like canned salmon salad, on hotdogs and hamburgers, and sometimes just eat a few spoonfuls direct from the jar when I'm craving something sweet and tangy.

The whole process went perfectly. My propane tank was feeling light so I preheated the water in the big pot to boiling inside on the stove first. Then I carried it outside and put it on the propane burner.

The electric skillet worked great for simmering the relish. Being about the same height as the jar tops it made it easy to ladle into the jars.

The only problem- my brand new gray plastic ladle is now stained orange from the half teaspoon of turmeric in the recipe. The texture is just how I wanted it.

As I was cleaning up the big mess in the kitchen I decided to throw the hot pepper trimmings to the chickens. Nope. Not interested.

Had fried potatoes and eggs for supper again. I think I should've planted more potatoes.
Good news about potatoes is they multiply and come back each year.
