Good morning! I’m going to pressure can some mixed vegetables today. I spent yesterday picking everything I could find and chopping them up. The mix is heavy on the beans, with sliced carrots cubed zucchini, a few Shelly beans and tomatoes. It sounded more appealing to me the some reason.

We buy a normandy mix as they call it at Costco has most of what you are saying few minutes in a 375 oven ready to eat.

I picked a few things from the garden this morning. I have enough beans in the freezer so I'm going to be eating a lot of them fresh this week.

Might try to make some sweet pickled zucchini spears with the squash. And I'm going to start accumulating tomatoes in the freezer so I'll have enough to make big pot of tomato sauce that I can can (not to be confused with the dance).

I started chopping some of the big zucchini leaves off so I can get to the squash easier.

I brought more carrots so they are tonight.
Did the breakfast dishes. Gardening table the Son made me fell over Another gnome broke glue applied he is drying on the dining table.
Maybe keep them all in the house.

I got bored and dug up a few more potato plants. There weren't any huge ones, just mediums, smalls and tiny pea size potatoes.

None of the potatoes were chewed on by critters. I'm wondering just how long they would stay in good shape if left in the ground. Time for an experiment me thinks.
