Salsa day, got it all done in 3 hours, 5 to 8am. Along with tomatoes and onions, I used mostly hot peppers; jalapenos and 6 serranos (plus one sweet bell pepper). It tastes spicy, but not extremely hot.

My hands are burning from chopping the peppers. Maybe it'll help the arthritis in my hands. LOL

I get 50 lb bags of mash nice weight yard tractor moves them.

I decided to make bbq sauce with the juice from the tomato skins/seeds/seed pulp. Waste not, want not. It still needs an hour or so of simmering to reduce.

I was shown a good one years ago.
brown white sugar in a pan, add tomato then cup of seasoning.
Maybe that would a good way to use the left tomato.
