no no no give it up that ain't an Omlette. It needs to be fresh beaten eggs spread on the grill and once flipped then add the fresh chopped and sautaed (sp) veggies and choice of meat and some colby jack roll it and serve with fresh home made hash browns and grilled muffin. Sounds like I just planned dinner for tomorrow!

Ogress sorry to hear of all te ongoings in your life. I do have a little understanding of what you are talking about. First things first I know it is not easy but you must find a way to deal with all of this that DOES NOT put you in the same situation as DH.
You may remember last winter when I did an overnighter in the hospital. Well I did learn some things from that. I do still have some issues with the anxiety but now I can feel it coming on and start trying to deal with it before it gets bad. I just kind of tune things out for a bit and go to my (what I call) happy place.
As for DH please keep in mind that anxiety IS NOT NOTHING it does kill. I can also say that having been there it is pretty scarry (the first time for me).

In the ER last night I walked over to their coffee machine and saw bags of TAZO Tea. One was chamomile and it was labeled "Calm." I fixed it and said "Look Don, Calm in a baggie - just drink this and let's get out of here" as the nurse called out "noooooooo!" as she ran over to grab the tea (I was still holding it, Don hates tea).
 
for me the "already cooked" is the key phrase. I love this idea, CL. I figured I would make the mini omelets also with some bell peppers, chez, and little bacon. Lordy knows I have bell peppers right now. Tons of them. Just cooked down two huge pots of tomatoes, peppers, onions, few jalapenos, etc...gonna run it through my food mill and voila...tomato sauce.

I do something similar - BUT don't put it through the food mill and I add one cup of red wine, I can the whole batch and the results make for an instant anything sauce! Some rabbit or chicken pieces, top with "sauce" and bake; Yummy. Or add chunks of meat to "sauce" and spices - chili! Add mushrooms to sauce, cut up brats and pour over noodles; so many great ways to use it. Love those bell pepper sauces, just put a whole bunch in the pantry for winter.

BTW the proper (French) way to make an omelet, you don't flip it EVER - got to keep it soft inside! Creamy! Yummy! Melty!
 
Ogress, I feel your pain girl. I've taken DH to the hospital BILLIONS of times. Usually to the UW. It takes exactly 1 hr 15 minutes to get to the Triangle Parking Garage with no traffic. Used to be caring and compassionate but you get numb. You'd think the nurses would kind of get that. Nurses can be a pain in the butt. They don't care what you are going through, only about the patient. People comment on how they 'don't know where I get the strength'. I just shake my head. I'm not strong, It's the wall in front of me thats strong. Anymore I just tell DH to take the bus! (just kidding) Hang in there girl. We are women! Hear us roar!
 
Frittata

Quiche without the crust. Make it in a cast iron skillet - top with mozzarella, tomatoes, sausage, bacon, mushrooms, peppers, sauteed spinach, Parmesan (anything you like). Cook on stove, then into hot oven to cook the top. Slices up nicely, can last several days - serve hot or chilled, Yummy

EASY!
