It's actually pretty easy when there's not very many other choices for food. We don't eat dairy (no milk, yogurt, butter, cheese, etc), gluten (no pasta, bread, cereal, etc), or soy (in EVERYTHING prepackaged). Because of that, we choose to eat a Paleo diet consisting of "clean" meat (meat raised humanely and killed humanely, and fed the way nature intended, lived a happy life before being slaughtered, etc), fruit, nuts, vegetables, seeds. We eat eggs almost every day for breakfast and use eggs almost every other meal as well, especially when baking Paleo things because there's nothing else to hold baked goods together besides egg. Because we don't eat cereal, besides gluten free oatmeal there aren't many options for breakfast but eggs; sometimes I use eggs in my Paleo muffins we have for breakfast once or twice a month. Here's some of our favorite meals that qualify for our diet:
Brussel sprout hash with egg on top:

Add 1-2 raw eggs into green smoothies for lunch
Of course, scrambled, poached, over easy eggs for breakfast with bacon, sausage, and/or fruit
Hard boiled eggs with a lunch of sliced veggies (cucumber, tomato, red/orange/yellow bell peppers, broccoli, carrot sticks) with homemade hummus for dipping
Egg salad (served over a bed of greens since we don't have sandwiches), or add hard boiled eggs to your chicken salad
Gosh there's more but I can't think it's been a long day. I'll post more ideas when they come to me. HTH!
