Speaking of canning & such....
We tried making some of my son's deer into breakfast sausage patties this year for the 1st time. Turned out pretty good, I guess, except for the size. Those of you who know me fairly well know I'm a bit of a perfectionist; I like things uniform & neat. Makes storing a lot easier.
Been looking for a sausage patty press, but haven't run across one yet. Already have one for hamburger, somewhere, but it's way too big for sausage patties. I could use an upside-down Mason jar, I guess, but a press would suit me better.

Any ideas?
K W sausage or at least country sausage is stuffed in a bag through the grinder . Do you not have one ? And cloth bags for smoking or plastic bags for freezing. But both require slicing . Look on ebay or just google sausage making. If still fresh guess you could roll it like biscuits. Cut bit with a biscuit or cookie cutter . Or a can .Find one with at least three quarters of a inch smooth fore the ridging starts .Once you use a can opener to take the lid off ,then cut then lid sealing edge off too. That makes it cut better.:drool Then send me some
 
Ok I have 36 hard boiled eggs chilling in the sink with ice on them.

I have a case of pint jars ready and my stockpot/waterbath canner is clean... I can double stack them in that pot...

Now I just need my son to bring in the vinegar from where ever hes stashed it... hes not home from work yet. Pickling spices and Fresh Garlic cloves... I think I need to peel the garlic... LOL. dont rememberr where I put my dehydrated garlic... And since I did get into the cherry peppers last night... I have a jar of cherry pepper juice or two to add in the brine.

I also have a can of sliced Jalepenos... Love em want em.... cant have em.... and this one is one I Can Resist... Nope just pickling spice and Tumeric Garlic and maybe some onions... I have little baby pearl onions in the freezer that need to be used up...

I don’t like picked eggs, pigs feet or any of that crap. I’m super finicky too. If it stinks, I won’t eat it.

@kwhites634 how about pressing the patties into a large muffin pan? Maybe line it with plastic wrap to pull them out, or stick the pan in the freezer for a few minutes and pop them out.

Speaking of hatching, I think I’ll gather this weeks call duck eggs, and some cream legbar eggs to set. 3 of my cream legbar hens are running with a different CL rooster, plus a couple of splash bantam cochin roosters. I think I’ll have to try some of their eggs too, just to see if the cochins can/have fertilized them. :D
