As for storing the meat, to prevent freezer burn use freezer paper/butcher paper and wrapp tight, zip bags will give freezer burn in a few weeks.
i do a lot of canning and such and my mom is 75, from a rural life and her advice is freezer paper.

I have no problems cleaning a deer let alone a chicken...

But those baby diapers.... That's a whole new level..... Puke as well... I can get elbow deep inside a deer and not think twice, but my 2 month old puking on me or filling a diaper after a week of storing it up.... Yuck no thanks....
 
my rule with babies, including the diaper, if I didn't make it, I ain't touching it!

I have ordered a "sticking knife" and think that it may be easier to locate the jugular vein by sight and feel and then 'sticking' it rather than slicing.

I have searched for this answer but can't find it: Is the jugular vein on both sides of the neck or on one particular side????
