What are the USDA Regulations for raising meat chickens? (in the US)

I live in a rural area, and have only been raising meat chickens for 2 years. I have 67 at this moment, but I have orders for 75, and I haven't really done anything at all to advertise. My wife went to the doctor a couple weeks ago and mentioned that we raise chickens. The doctor and two nurses ordered 28 in total. I've had to trim back people's orders. I've often wondered what would happen if I really tried to market them.
