I would lean toward picking a breed that is an egg producer, meat protein will be a waste of feed. The breeds like leghorn also are more flighty and will survive (if possible).
Yeah, unfortunately for me I'm running up against what I can do now vs. what would be ideal; I own a home by a huge lake, but poultry is banned. Quail "don't count".

My quail are egg laying bred ones for the most part, though, since I don't have the big meat maker/jumbo lines. In an emergency I would eat all but two males and ten hens and have an indefinite supply of eggs, with a couple extra birds to cull every year as I bred replacements.
The high protein % required to keep them healthy is annoying, but I know some ant hills I can tractor them over if push comes to shove.
