I noticed my dh getting carrot cake whenever we went to Golden Corral rest. I have never eaten one nor have I ever made one till this week. I decided to try it since I saw a link from Miss Prissy on here. OMG, I am in love now with carrot cake. I did do half mine in grated fresh apples. He was so pleased that I made that for him. It is also the first "scratch" cake I have made in years. A big thank you!!!

My mom sent me a new bread book and I had to make this right away. It is really good. Stuffed with spinach and Ricotta cheese with smoked Gouda sprinkled on top. There is fresh garlic mixed into the dough too - only thing I would change is to add some course sea salt on top to give it a extra pop of flavor. I was going to bring the book to post the recipe and walked right pass it on my way out the door this morning. But had to post picture today.

Sandee, that looks so good. Can't wait you post the recipe for that one. Both stores I went to today had pumpkin so I stocked up! I will be getting busy making a pumpkin cheesecake soon.

ETA, can I freeze left over pumpkin? I bought the big cans and never need it all.
