We just started using coconut oil but not for baking, is anyone else using it to bake?
We use Coconut oil for all of our baking and frying. Everything comes out delicious!Hi All,
We recently made corn bread using coconut oil instead of melted butter, turned out as usual with a light taste of coconut.
So we will keep using it.

Bacon Frittata
1 large potato - shredded
2 Tablespoons of onion
3 eggs
3 egg whites
1/2 cup low fat or fat free milk
3 slices of bacon - diced fine (I used a Hormel bacon I buy from Sam's club - pre-cooked, 50% less fat, and shredded - only 1 Points Plus per tablespoon)
1 tomato - diced
1 teaspoon of dried chives (fresh would be better but that is all I have)
1/4 teaspoon basil
ground black pepper to taste (I used just a couple of cranks of the mill)
2 ounce of shredded cheddar cheese
salt and pepper to taste
Fry potato and onion with a spray of oil in the pan, until brown.
Beat eggs, whites and milk on a large bowl until well blended. Add everything but the shredded cheese. Mix well.
Wipe out the non-stick pan and spray lightly with pam. Use a pan that can go under the broiler.
Turn on the broiler to pre-heat.
Pour the egg mix into the frying pan, cover and cook on medium-low until bottom is solid, about 7 minutes - do not stir. About 1/2 way through cooking, sprinkle on the cheese.
Remove cover and put pan under the broiler - about 5-6 inches away - and cook for 5 min. or until brown.
You can add more veggies if you want - I would love green peppers in this, but they give me a stomach ache so I now avoid them.
