DH is on a low-carb diet, so I made a double recipe of these:

Only 10 carbs for 2 of them. And they are delicious! Plus, I just purchased a box of Carbquik Baking Mix from Amazon: http://www.amazon.com/gp/product/B005YVU6FY?psc=1&redirect=true&ref_=oh_aui_detailpage_o01_s01 Now I can make him some more Impossible Pies, cut them up & freeze. I haven't tried the Carbquk yet, but I'll give it a try today.
