I made a homemade cherry pie last night but before I could get a pic.....a 1/3 of it was already gone.....must have been good
Getting ready to bake a batch of biscotti for my neighbor who wants to gift it to another neighbor! How sweet is that?! I have such a sweet little community out here.
Apple Pie...I had a few apples that are getting to the bruised stage so I made a apple pie:
Filling 8 medium peeled and sliced apples (I used mac apples, any kind will do)
3/4 cups sugar
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon salt
Crust:
2 cups of flour
1/2 teaspoon salt
1 tablespoon sugar
6 tablespoons of real butter (makes better crust than imitation in my opinion)
6 tablespoons crisco
6-9 tablespoons of ICE water
Topping:
A little canned milk
A little sugar/cinnamon mix
Put the dry ingredients in a bowl. Cut in all butter and crisco. Do not over process. The less you handle it the better. Now add the water and just mix it around a little. A very little. Put it in the refrigerator for about an hour or so.
Roll out your pie crust. I make a couple of balls out of the pie dough to get started. I use wax paper with some flour sprinkled on it and on the rolling pin and on the top of the dough. Roll Roll Roll. Then roll some more until it's is about 1/8 to 1/4 of an inch thick. Depending on how you like it. Put your pie pan on top of the dough and flip the dough right side up. Throw the apple filling in. Do the same with the top and make a fancy or non fancy edge. Lastly now here's the good stuff. Take a small hand full of canned milk ( a couple of tablespoons) and spread it on the top. Don't rub it too much or you will have goo. Just pat it on. After that is done Use a little sugar/cinnamon mixture and sprinkle that on top of the crust. It's to die for. YUMMY!!!
Oven at 425:
Bake at 425 for 15 minutes then reduce heat to 350 for 45 minutes. Just keep checking it towards the end to make sure it's not burning and make sure you put something to catch the juice from the apples. I learned this the hard way years and years ago!!
