What are you baking now?

Im gonna try to bake some white bread tonight to go with some scotch eggs. I've been wanting to try these things for a while. Just the thought of deep-fried, sausage-wrapped, hard-boiled eggs makes me

I think some nice, fresh toast would go perfectly!

edit to say- Im gonna try and NOT deep fry them because of my stupid gallbladder (which has taken all the fun out of my culinary life since it started to act up).

Made this last night and enjoyed it! I never thought to make bread pudding in such a small quantity! Worked great - but I did add an additional TB of brown sugar because 3 TB didn't sound like enough. I used a small Pyrex pie plate to bake mine in.

Bread Pudding for Two - source: Taste of Home web site

Prep: 10 min. Bake: 30 min.

* 1 cup soft bread cubes
* 1 egg
* 2/3 cup milk
* 3 tablespoons brown sugar
* 1 tablespoon butter, melted
* 1/2 teaspoon ground cinnamon
* 1/4 teaspoon ground nutmeg
* Dash salt
* 1/3 cup raisins
* Vanilla ice cream

Place bread in a greased 1-qt. baking dish. In a bowl, whisk egg and milk. Stir in the brown sugar, butter, cinnamon, nutmeg and salt. Pour over bread; sprinkle with raisins. Bake, uncovered, at 350° for 30-35 minutes or until a knife inserted near the center comes out clean. Serve warm with ice cream. Yield: 2 servings.
