What are you baking now?

MANGO SEASON!!!!!!!!!

I made a deal with mother in law... 3 ducks for as many mangoes as I can carry!!! (that's a joke, I'm always allowed mangoes and I always give her ducks, hahahaha).

She has like 8 mango trees (or more, we're not actually sure) and definitely not enough people to eat them all. So a 4 hour drive usually ends with a CARFUL OF MANGOS! (OMG the organic mangos at my co-op are $3.50 A PIECE! EFF THAT)

Mango mango mango! Mango mango mango!

I'm gonna can like a million jars of it (Can you imagine if I paid full price for this? $4.50 for the jar + $3.50 per mango x 3 mangoes in a jar x 24 jars) and then I'm gonna freeze a whole giant pile of them in easy managable smoothie-hit sizes. THEN I'm gonna make a pie. THEN a crumble. THEN i"M GOING TO EAT A MILLION MANGOES AND GET COVERED IN MANGO JUICE.

And my chickens will eat a pile of gooey mango flesh off the skins and love me forever and return the favour with mango-flavoured eggs.

I'm easily excited.

Got a fabulous loaf of italian bread in the oven to make sandwiches for dinner

Oo, oo, oo! Apple fritters! They are one of my favorites! Roll them in cinnamon sugar while still hot and YU-UM! Call me when they're done, I'll be right over!

Here's a recipe for them I've been dying to try (replace the 1/2 cup dates with more apples if desired)... http://www.foodnetwork.com/recipes/apple-date-fritters-with-lemon-curd-cream-and-candied-ginger-recipe/index.html

hint: Don't over mix the batter. Fritters are a little like muffins that way.

I'm making merengue cookies again. I tell myself that they are better for me since they have very little sugar per cookie but I think I just eat twice as much!

Yesterday it was cinnamon rolls, dinner rolls, and Gump bread. Today it was no bake cookies and brownies.
Just had 2 days of icky weather and spent it baking

Sometime back I posted something about a new book that I had bought called Sophie's Sweet and Savory Loaves - $25.00 at local gourmet kitchen store. Another BYCer emailed me the other day and made me aware that this book is out of print and sells for well over $200.00 and there are some on Amazon that are as high at $3,000. WOW!! I had no idea. I have made a couple of the recipes and have not been that impressed - which could just be me - but guess I better cook my way through it and see what I get from other recipes.

For now think I just hang on to it and consider it my own private 401K plan!! LOL
