What are you baking now?

I have baked 29 DOZEN Biscotti this week! I was ready to crash this morning since I took my last order for guaranteed Holiday Delivery. However, I got more orders late last night but they said it was personal and they'd chance a late arrival! LOL

So you think I could break my record for baking in one week?

DD and I are doing ALL our holiday gift cookies all day together on Saturday. She's so excited that I can't be burnt out. We're going to buy reindeer cookie cutters today since she INSISTS Santa wants reindeer cookies this year. HAHAHAHA

Well, when I was introduced to it it was called
"White Trash", I like white Christmas better

9 cups rice chex
1 & 1/2 cups plain M&M's
1 cup salted peanuts
1 cup pretzels
2 12 oz. bags white chocolate morsels

Mix dry ingredients, melted chocolate and pour
over dry, spread on wax paper. Let come to room
temp. Enjoy!

I put in tins and bags and give away, if I can keep DH away from it!
 
I made crackers tonight. I need a better rolling pin - Mine broke while rolling them out

The recipe I used is:

1 1/2 c all purpose flour
1/2 c whole wheat flour
1 tsp salt
3T Olive Oil
3/4 C water
Seasoning of your choice (I used Cavenders Greek Seasoning)

Mix flours together, add salt, oil, and water mix until dough ball forms. Preheat oven to 450 degrees F. Let dough set 15 minutes. Cut dough in half and cover 1 half so it doesn't dry out. Roll out dough super thin on floured surface, season with your seasoning of choice - roll season in with rolling pin. Cut into pieces using a knife, cookie cutters, biscuit cutter etc. ( I used a canning lid...)

Spray cookie sheets with cooking spray, put crackers on sheet. Prick crackers with a fork. Brush with water and sprinkle with Kosher salt. Bake for 8-9 Minutes.

Holy cow vfem!

I've never tried to make biscotti. I just may have to try it sometime.

Coconut cookies - haven't done these before but the recipe looks awesome
Candy bar fudge
Thumbprint cookies

Plus I'll be giving some jam away too.
